WIAW: Eats from a Tuesday

Happy hump day! We’ve officially made it to the halfway point in the week, which means two things:

  1. I’m already SO ready for the weekend it’s almost ridiculous, and
  2. It’s time for another blog post full of pictures of food

So without further ado (and since I’m more than eager to get outside for a little extra sun time on this gorgeous Tuesday evening), let’s jump into it! This post is full of my eats from yesterday, a Tuesday filled with a kick-booty RPM spin class, extra upper body work, and quite a few walks throughout the day. As usual, please don’t use this post as a comparison tool and if you have struggled recently or are currently struggling with an eating disorder, it may be best to just skip this post and check back in tomorrow.

Breakfast–ย Once again, my Peanut Butter banana oats came in for the win. I still just can’t get enough of these and the recent spike in temperature only makes me crave these cold oats every morning after a sweaty workout. For those of you who may not be regulars to my blog, these overnight oats are made from 1/2 cup oats, a little over 1/2 cup unsweetened vanilla almond milk, a big spoonful of both plain greek yogurt & peanut butter, and a sliced banana plus some cinnamon on top. So delicious and filling!

Morning Snack–ย You guys, I have a confession. My morning eats have continuously been almost the exact same for the past few months. Tuesday was no exception, so of course an unpictured greek yogurt around 11AM happened. This time it was 2% Fage Key Lime–my absolute favorite!

Lunch–My lunch today was enjoyed with a friend outside on the patio of my office building in the sunshine, which I’ve decided is the only way to eat lunch on a sunny & slow work day. Today’s lunch was lighter than normal– a sweet kale salad containing brussel sprouts, kale, cabbage, dried cranberries, roasted pumpkin seeds, chicken, and poppyseed dressing. For those of you looking for quick & healthy lunches for the week, I’ve been known to grab a bag of this pre-made salad mix from Costco every week and just top it with some rotisserie chicken for a yummy and easy meal!

Snack– an almond & coconut Kind Bar. So yummy!

Dinner–On tonight’s menu was my new favorite meal: grilled lemon & dill salmon with a kale & chia brown rice mixture from Costco and roasted brussel sprouts. Recipe to follow soon for the salmon; it’s so quick & easy and seriously one of the better salmon recipes I’ve tried to date!

Dessert– Because there’s no way I can end the day without something sweet, I went with a bowl of my new favorite popcorn– sea salted caramel! If you’ve seen this at the grocery store and debated whether to test it out like I had, I’m telling you now that it’s SO worth it!

  1. That salad combo is one of my favorites – good for my sweet tooth. Poppyseed dressing, chicken and cranberries are perfect together.
    Whatever you did to your brussel sprouts…they look extra delicious.
