Buffalo Chicken Wraps

And just like that, we’re right back to the midway point in the week. I hope you’ve all had a great start to your week and if not, there’s only a few more days until we’re back to another weekend. 🙂

Because it’s Wednesday, I figured it was important to talk about food in some way. Today I’m bringing you one of my new staple recipes– Buffalo Chicken Wraps. I’ve mentioned these a time or two in my WIAW posts and always promise to bring you the recipe, so I’m FINALLY following through on that promise!

This meal is so easy and can be prepped and cooked up in less than 30 minutes, which is a total score if you’re anything like me and don’t have the time or energy to devote to prepping a big meal after a long day at work.

If you like a little heat and are a big fan of wraps–this is for you! 🙂


To start, mix 2 handfuls of broccoli slaw, half of a diced red onion, a diced avocado, and shredded cheese in a big bowl. You can also add baby tomatoes if you have them– it definitely adds to it, but I didn’t have any on-hand when I cooked this batch of wraps up last week.


After combining, take one chicken breast and chop it into bite size pieces. Or if you’re like me, have your boyfriend do it while you take a million pictures of the process 🙂

You will now need to create your “buffalo” sauce. Bart never follows a true recipe, but estimates that he uses about 1/3 cup honey, 1/4 cup hot sauce (or more if you like heat), 1-2 TBS of Worcestershire sauce and 1-2 TBS of Apple Cider Vinegar plus a dash of salt and pepper to taste. Combine all of this over medium-high heat until boiling. Meanwhile, add 1.5 TBS of cornstarch to a dish and combine with 1/3 cup of water. Once your sauce mixture is boiling, add the cornstarch to it and continue to mix until it becomes thick.


Cook your chicken on the stovetop in 1 TBS of olive oil over medium-high heat. Once cooked all the way through, add your sauce mixture to the chicken and simmer for 2-3 minutes until the pieces are thoroughly covered. Then add the chicken with part of the sauce to your original veggie mixture.


Line the center of each tortilla with a big spoonful of plain greek yogurt.


Add your veggie & chicken mixture on top and wrap it up!


You could easily eat the wrap without this step, but Bart & I like our wraps extra crispy 🙂 To get the extra crunch in your meal, spray a pan with nonstick spray and place the burritos in it over medium heat. Let the wraps sit for about 1 – 2 minutes and then flip.


And Voila! A healthy and delicious dinner in the blink of an eye! (Or a few blinks…)
