And just like that, we’re at the mid-point of our week! These past few days have been insane, so I’m already more than ready for Friday to roll around, even though I know it’s a bit of an uphill battle in terms of what I have going over the next few days. On top of all the craziness of work, I have to deep clean my apartment and make sure everything is ready to go by tomorrow morning so my landlord can start to show it to potential tenants after I move out in a few weeks.
So in order to keep things short and get to the laundry list of chores that awaits me after I finish up this post, I’m going to bring you a little peak into my daily eats per my typical Wednesday posts. I realize I haven’t done a food-related post in quite some time, so I figure this is the perfect occasion to bring you all a peek at my meals from yesterday, a Tuesday filled with RPM and a whole lotta work in the office!
Breakfast– PB Overnight Oats
Yes–this still hasn’t gotten old for me. 1/2 cup oats, 2/3 cup almond milk/ a big spoonful of plain greek yogurt & PB, plus a sliced banana for a little extra sweetness. What I love most about this breakfast is that it keeps me full throughout the morning and the cold oats are great after a sweaty workout (and paired with a hot cup of coffee 🙂 ).
Lunch– Salad & Chicken-filled Wrap with apple slices
This has been my latest lunch obsession–Ezekiel wraps filled with a salad mix from Costco with chicken on top! Wraps are so versatile, so it’s nice to mix the fillings up each day. Paired with an apple, this keeps me pretty satisfied throughout most of the afternoon!
Snack– Almond & Coconut KIND Bar
I’m pretty sure I’ve mentioned this in WIAW posts before, but these KIND bars are my absolute favorite! They’re delicious and help me curb my typical 3PM sugar cravings. If you haven’t given these a shot, you definitely should!
Dinner– Italian Zucchini Noodle Skillet with Sausage
So about 3 weeks ago, Bart and I bought a spiralizer and since then, we’ve turned into HUGE zoodle fans! For those of you who many be unfamiliar with zoodles, they’re “noodles” made from spiralized zucchini and are an absolutely delicious way to get an extra source of veggies in during a meal! This skillet was a mixture of sautéed onions, red pepper, a italian chicken sausage all on top of zoodles and topped with parmesan cheese. SO good and so simple to throw together after such a long day at work!
Dessert– Chicago Mix Popcorn
I have to admit, I think my addiction to this stuff is a bit ridiculous. This Chicago Mix popcorn is the perfect combination of salty and sweet, which leaves me craving it at the end of a long day. I love a mix of flavors (what can I say–I’m my mother’s daughter 🙂 ), so a big bowl of this cheesy, cararmely goodness is the perfect way to cap off a crazy Tuesday!

Overnight oats are one of the best ways to get oats without them being hot on those warmer summer/spring days. Aren’t Kind bars so yummy? Do you put nut butter on them?

Yes they’re an awesome summery breakfast option! And no I’ve never tried that before! Definitely will be busting out my PB jar this afternoon to try that out 🙂

Everytime i see people use spiralizers, I remind myself that I need to get one for zoodles! Glad to hear you’re in love with it now! Cheesy and caramel popcorn sounds superrrr addicting!
