What I Ate Wednesday: Trusting Your Body

Happy Hump-day everyone! Does anybody remember the Geico commercial with the camel celebrating Wednesday? For some reason, it seemed to stick with me over the years so even though I haven’t seen the ad in quite a while, I always think of this camel when I make it to the halfway point in my week! 🙂

Since today is Wednesday, I figured it was only fitting that I bring you all a little “What I Ate Wednesday” action. Today’s post recounts every single thing I put in my mouth this past Monday. Monday’s workout included my first 2.5 mile run since my knee problems started, followed by 30 minutes of elliptical and a 30-minute weight lifting circuit.

The purpose of these posts is NOT to compare your daily eats to mine. Every person is different and every body needs different things based on a number of different variables. The last thing I want to do is provoke people to change their eating habits to mimic mine if that’s not what their bodies need.  As a blog reader, I love getting ideas from other people on different snacks or meals I can try in my own life through these types of posts, which is why I will be continuing to post these daily eating recaps every week. Hopefully you all get a few ideas through my posts, too! 🙂

Since recovering from my eating disorder, one of the biggest things I’ve learned is to listen to my body and give it what it needs or wants. Sometimes that means carbs and sugar, sometimes that means fruits and veggies. Our bodies are so much smarter than we give them credit for and throughout my journey, I’ve come to realize that and trust mine even more. With that being said, I truly followed my intuition this past Monday in terms of my eats throughout the day and ended it completely satisfied. Enjoy!

After getting home from the gym, I knew I needed my instant protein fix to help my body recover from the tough workout I had. Thus, a nice cold protein shake was definitely in order!

I’m lucky enough to work only a 10-minute drive away from my office, so I typically eat breakfast at my desk while I check my email. I knew I would have my typical peanut butter craving when I was prepping my breakfast the night before, so I threw together my favorite Overnight Oat recipe and enjoyed every bite Monday morning.

One of the biggest hurdles I had to overcome in my recovery was allowing myself to eat between meals. Morning snacks weren’t a norm for me, but they’ve quickly become a staple in my life as I wake up way too darn early to not have a little snack to tie me over. Today, this little yogurt was just enough to get me through my insane morning.

I have a new lunch obsession I’m so excited to share with you! This past weekend, I was on a mission to find something new to bring to work for lunch since you can only have a Costco salad so many times before it starts getting old. I came across these Veggie & Grain Bowls and decided to give them a try and man am I glad I did! The bowl includes tomatoes, roasted garlic hummus, quinoa, brown rice, onions, spinach, carrots, broccoli, black beans, edamame, roasted corn, kale, green onions, lime juice, cilantro, and jalapeño peppers, all of which kept me completely full throughout the day when topped with chicken and paired with a pear.

Later in the afternoon I had a serious craving for a mix of something sweet and salty, so trail mix was a natural fit. I also had a slice of my yummy raspberry banana bread shortly after getting home from work just because I knew it was in my fridge. Funny how food can call to you like that sometimes 🙂

Grilled chicken fajitas and brussel sprouts were on the menu for dinner Monday night. Bart did a fabulous job grilling up the meat and veggies and we both stuffed our tortillas full of goodies and were completely stuffed ourselves afterwards! My dad is an awesome griller, so I always grew up eating yummy BBQ, but never learned how to make it myself. Luckily, I found a boy just as good at grilling to take care of me 🙂

Of course my day wouldn’t be complete without a little something sweet to top it all off. This strawberry and cream yogurt bar did just the trick!

And that’s a wrap! Although Monday was a fairly solid day of healthy eating, that definitely doesn’t mean that I eat clean every day. Some of my favorite foods include ice cream, pizza, and french fries, so you better believe they make appearances in my life pretty often. That’s just the beauty of balance 🙂

  1. Man, that veggie and grain bowl looks super good. As does the raspberry and banana bread! Do you have a recipe? 🙂 And I have to agree that listening to your body is one of the most difficult things to do in recovery, but it’s so important.

    • Hi Emily! The veggie and grain bowl is actually just from Costco, but I’m sure it can be recreated. I’ll play around with it this weekend and try to create something I can share! The raspberry banana bread is from a recipe I posted Thursday. It should be linked to in the post as well! Enjoy! 🙂
